Sunny Days Call for Sangria Cupcakes

My darlin’ Portland, you make me so happy. You are the true expert at level-setting expectations. Because when the temperatures reach 70, hibernation ends. Natives think that they’re invincible, and the sunburns that will be on display at work tomorrow will make everything worth it.

I fell in love with running right after I graduated from the University of Oregon… It started with the three miles…moved to the five miles…moved to the 15k’s…moved to the half marathons. I’m not sure where it will go from here.

Well now I know where “it will go from here.” This weekend saw 18 miles, my longest-to-date in one sitting. Err…standing. I’m in the final pushes of my training for the Eugene Marathon, and it’s finally starting to seem real. Other highlights from the weekend include my baby sister’s completion of the MCAT, one of my favorite gal’s birthday celebrations and one of the above referenced sunburns. (It’s not my fault! I rock SPF 50, Mom, I swear!)

Seemed fitting to make some Sangria-inspired cupcakes. They are zesty, and tangy, and boozy, and sunny and simply wonderful. They should be drank with lots of H2O as there is a SOLID amount of alcohol in these. No bubbly this week. Believe me…your liver will thank me.


Recipe (makes 12):


  • 1 cup white flour
  • 1 cup white sugar
  • 3 eggs
  • 1/2 cup heavy whipping cream
  • 1/4 cup red wine of your choosing (I went with King’s Ridge 2014 Pinot Noir) 
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/4 cup grated orange peel
  • 1 cup melted butter
  • 1 tsp cinnamon
  • 1 tsp cayenne pepper


  • 16 oz confectioners sugar
  • 1/4 cup red wine of your choosing
  • 1 cup melted butter
  • orange slices for garnish
  • blackberries for garnish



Set oven temperature to 350 and line cupcake tin. Mix cupcake ingredients, sans wine. fill liners and bake for 18 minutes. Pierce each cupcake with fork and pour wine over cupcakes so that the liquid is absorbed. While cupcakes cool, mix the sugar, wine and butter for the frosting. Frost the cooled cupcakes and garnish with orange slices and blackberries. I added fancy pants silver straws for next-level fun 🙂
